This is a variation on my Asian Slaw. This one is a bit denser so you don’t need as much, but its equally fresh and tasty.
- 3 firm ripe tomatoes (medium diced)
- 2 Lebanese cucumbers (medium diced)
- 1.5 cups of fine sliced red cabbage
- 1 bunch of fresh coriander (chopped)
- Combine all ingredients in a bowl and serve.
- Can be dressed with an Asian style dressing.
- Add spring onions for a little extra bite.
