Asian slaw

Quite often we go ‘low carb” for dinner which usually means chicken or fish with a simple salad.  This Asian Slaw is super quick to make, fresh, healthy and tasty.  Its a perfect side.

In this version I have red/purple cabbage, coz lettuce, red capsicum/pepper, coriander and cucumber.

You can choose to dress this or leave it.  Sometimes I like to add a few fried shallots for extra taste and texture.

Its a perfect side to my Hoisin Chicken.
