Bruschetta Greek style

This is a variation on a theme, but simply delicious.

Get some fresh crusty bread, cut a couple of thick slices and toast them until golden brown.  On each slice spread some hummus and top with some shredded lettuce, small diced tomato, small diced Lebanese cucumber and a little red onion.  Add salt and pepper to taste, then a squeeze of lemon, some greek yogurt and a drizzle of caramelised balsamic vinegar.  Yum!
