This recipe is my version of an oldie, but a goodie and so relevant for today given the resurgence of cauliflower. I made this a few weeks back and posted via social media, surprisingly people haven’t heard of it! I grew up with it as a child and remember it as a great winter warmer and for me its a lovely comfort food. If you have never had it before I say make it now and let me know what you think. This is an oldie, but a goodie. I grew up with it as a child and now here is my basic cauliflower cheese recipe for you all to enjoy. Its a great winter warmer and for me its a lovely comfort food.
- 1 Ea Cauliflower
- 50 Grams Butter
- 1/4 Cup Plain flour
- 2 Cup Milk
- 1 Tbsp Dijon mustard
- 2 Cup Tasty cheese Grated
- 1/2 Cup Mozzarella cheese Grated
Preheat oven to 180c
Break or cut the cauliflower into small florets and add to water in a saucepan. Bring to boil then reduce heat and simmer for 10 minutes or until cauliflower begins to soften. Drain and set aside.
Make a bechamel sauce: In another saucepan melt the butter over a medium heat and then add the flour. Stir until mixture firms up to a dough like consistency, then add the milk. Use a whisk to stir until mixture thickens. Add the mustard and stir through.
Distribute the cauliflower in a baking dish and spoon over the bechamel sauce to evenly cover. Sprinkle over the mozzarella cheese then the tasty cheese.
Place in oven for about 45 minutes or until cheese has browned.
Cauliflower Cheese is a versatile side dish that you can serve with almost anything you want. Cook some sausage or rissoles and something green to keep it simple. It's also great with chicken, beef or pork, however you want to cook it.
